Context

A Michelin Guide–recommended Japanese fine dining restaurant operating in a highly competitive urban context, known for its ambition to explore Japanese cuisine beyond familiar references while maintaining a strong sense of identity.

Objective

The collaboration aimed to clarify the project’s culinary and cultural positioning, aligning internal intent with external perception. The goal was not to redefine the concept, but to articulate its direction more clearly as the project evolved and matured.

Challenges

The project faced several natural tensions.
On one hand, the breadth of the culinary proposal risked dispersing the narrative. On the other, simplifying that range too aggressively could dilute cultural specificity.

There was also the challenge of translating Japanese gastronomic codes into a European fine dining context without flattening nuance or relying on familiar clichés.

Outcome

The work resulted in a clearer positioning and narrative framework that reinforced the restaurant’s cultural coherence.
